Holland America Line to open ‘exclusive’ Asian-inspired restaurant

Holland America Line is launching a new and exclusive dining experience on the 2,100-guest Nieuw Amsterdam.

Called Morimoto By Sea, the concept will open later this year on 16 December, during the ship’s winter Caribbean programme.

The restaurant has been developed by chef Masaharu Morimoto, the cruise line’s fresh fish ambassador.

It will offer Asian-inspired dishes and beverages, to reflect Holland America Line’s new global fresh fish programme, such as sushi, tempura calamari salad, crispy fried whole market fresh fish and lobster pad Thai.

The menu will also include a selection of beef, chicken, vegetarian and vegan options.

Morimoto By Sea will be the newest addition to chef Morimoto’s list of worldwide restaurants and his first on a cruise ship.

Holland America Line ‘elevating the dining experience’

Holland America Line vice-president of food, beverage and guest services Michael Stendebach said: “Featuring cuisine from an esteemed culinary authority like chef Morimoto in his signature restaurant elevates our specialty dining experience for guests on Nieuw Amsterdam.

“The menu showcases a symphony of flavours and the freshest ingredients, reflecting the highest standards of culinary excellence from both Holland America Line and chef Morimoto.

“We’re thrilled to welcome guests there nightly on Nieuw Amsterdam.”

Morimoto added: “The creation of this restaurant has been a new and exciting experience and I look forward to sharing my culinary passion with guests aboard Nieuw Amsterdam.

“Morimoto By Sea will bring exceptional flavours and one-of-a-kind dishes to guests sailing around the world with Holland America Line.”

Guests can make Morimoto By Sea reservations on the line’s Navigator App or on board. The restaurant will carry a cover charge of $55 per person, plus gratuity.

Earlier this year, HAL also started the process of installing Elon Musk’s Starlink wifi across its fleet of 11 ships.
