As the first true superyacht in the Galapagos Islands, the 50m Aqua Mare takes an iconic once-in-a-lifetime adventure to the next level.

About Aqua Mare

As the first true superyacht in the Galapagos Islands, the 50m Aqua Mare takes an iconic once-in-a-lifetime adventure to the next level. With her expansive size and world-class pedigree, she boasts 30 percent more indoor volume than most yachts her size, making her the perfect respite after active days exploring the remote wildlife and dynamic nature of the Archipelago.

Aboard the Italian CRN Yacht-built Aqua Mare, guests will find seven large Zuretti-designed suites, including an 80 sqm Owner’s Suite complete with butler service, extravagant indoor and outdoor social spaces, elegant finishing, and immaculate attention to detail, making it the first of its kind in the region, and the ultimate retreat while exploring the dramatic volcanic landscapes of the Galapagos Archipelago. Exclusivity is combined with the most personalized service enabled by two naturalist guides for 16 guests, on top of the islands’ most exclusive one-to-one crew to guest ratio.

Accommodation

Accommodating a total of 16 guests, each of the seven individually designed suites including an 80 sqm Owner’s Suite aboard the Aqua Mare is a luxurious sanctuary to retreat into while exploring the beautiful Galapagos Archipelago. Designed by the Italian mega yacht designers Costruzioni e Riparazioni Navali (CRN) and outfitted by custom yacht interior designer extraordinaire François Zuretti, Aqua Mare stands out for her grand yet effortless sophistication, impressive large interior spaces, panoramic sundeck, and the lower deck multi-purpose ‘Beach Club’.

A striking aspect of the vessel’s suites is how curated prints from the Wallace and Darwin era of exploration complement soft interior furnishings, continuing the leitmotif of the islands’ dramatic volcanic landscapes. Perfected with soft carpeting and luxuriously paneled walls in walnut veneer throughout the entire vessel, sumptuous textiles, personally selected objet d’arts, and premium fittings, accommodation aboard Aqua Mare is one of subtle opulence befitting royalty.

Dining

Chef Pedro Miguel Schiaffino

A born and bred Peruvian, chef Pedro Miguel Schiaffino is known for being one of the first culinarians in his country to put local cuisine on the international map by bringing out the best of Peru’s regional flavors. Since 2007, he has partnered with Aqua Expeditions as Consulting Chef on board the Aria Amazon and most recently with the Aqua Nera, overseeing the onboard menu and dining experience.

Renown for his commitment to excellence which allows the transformation of uncommon ingredients into captivating and authentic dishes, chef Schiaffino has earned global recognition, including from The Diners Club World’s 50 Best Restaurants Academy for his innovative Amazonia-influenced cuisine at MALABAR and ámaz in Lima.

Blessed with a diverse and spectacular range of ecosystems thanks to its Pacific coastline, Amazonian rainforest, and high-altitude valleys, Ecuador has a dazzling array of local ingredients. With Aqua Mare’s cuisine, chef Schiaffino takes inspiration from the dramatic landscapes and flavors of the South American Pacific coast as well as the Peruvian Nikkei style to deliver a world-class dining experience, undoubtedly a highlight of all Aqua Mare itineraries.

Dining Room

The main deck is where guests will discover fresh and innovative locally-inspired cuisine with a Peruvian twist at the rear-located Dining Room. As with the rest of the ship, no expense is spared in its comfort and design, with a large Italian Carrara marble dining table that fits eight people, along with two other round marble tables that accommodate four guests each for a total of 16 guests. The entire ceiling is panelled with a luxurious microsuede fabric, while large windows allow for the admiration of the dramatic landscape outdoors as guests enjoy their meal.

Aft Outdoor Dining Area

The diverse and dynamic cuisine served onboard Aqua Mare deserves to be presented in a spectacular setting, and the Aft Outdoor Dining Room is the perfect location with its sweeping views. Enjoy communal meals at the grand 16-seater table or simply watch the surrounding islands from the comfortable daybeds at the aft of the yacht.

Reflected throughout the menu, our dining options showcase and combine Japanese technique and Peruvian seasoning using only the freshest local fish and seafood. An example of this is the Galapagueña lobster lettuce wraps with Acevichado dressing. Other delicious favorites are the delicate potato llapingachos, tuna crudo, barbecued plantains, and shrimp ceviche.

As with our other vessels, our menus are adaptable to any food allergies or dietary requirements our guests might have whether it is vegetarian, vegan, or pescatarian options. Our chefs on Aqua Mare are also happy to whip up special requests for both older and younger explorers, aside from our proposed menu in order to please everyone onboard.

Aqua Mare’s cocktail list also displays this localized influence with the Aqua Bloody Mary, utilizing the high Andean mashua and tree tomato in place of the traditional horseradish and tomato. The curated wine list is tailored to the menu with careful attention to South American vineyards.

Whatever your preferences, the Aqua Mare dining experience promises refined dishes on our specially designed Gaya ceramic plateware decorated with the flora and fauna of the Archipelago. Expect convivial al fresco barbecues and relaxed indoor dining courtesy of magical days and serene evenings aboard. While the calm morning and afternoon feasts are juxtaposed against dramatic coastal landscapes, nightfall assures an entirely exceptional affair. Illuminated by the stars from both northern and southern hemispheres, you will begin your gastronomic voyage with canapes of red crab and champagne, ending the night with a silky and light 70 percent chocolate mousse, made with one of the world’s best Ecuadorian cocoas.

In the spirit of Galapagoan conservation, Aqua continues to do its part sourcing only the finest ingredients with a focus on ethical sustainability and supporting local and regional farmers, fishermen and providores.

Upper Outdoor Dining

The sun deck panoramic dining area is ideal for al fresco lunches, sunset cocktails, evening barbecues and breath-taking stargazing, thanks to its two communal dining tables. Enjoy all-day dining here or simply admire the surrounding landscape views in absolute comfort.
